芙蓉鱼脑的做法

  主 料: 发好鱼脑300克,鸡蛋5个,冰糖400克,白糖50克,清水400克。   做 法: 1、先将已发好的鱼脑用刀切成细块,再用开水滚过后,捞起放进冷水中漂凉捞干待用。然后用大碗1个盛着250克的开水,放进白糖50克,放入鱼脑,放进蒸笼

  做 法: 1、先将已发好的鱼脑用刀切成细块,再用开水滚过后,捞起放进冷水中漂凉捞干待用。然后用大碗1个盛着250克的开水,放进白糖50克,放入鱼脑,放进蒸笼炊10分钟,后取出泌掉糖水待用。2、把鸡蛋5个磕开,取用蛋白(蛋黄不要),盛进餐碗内,用餐叉或小钢线球搅拌,搅拍至起泡,打成芙蓉状蛋液,然后倒在餐盘上,稍抹成山形状,放进蒸笼炊2分钟,后取出待用。3、把已炊好的鱼脑放进汤锅内,再把已炊好的芙蓉蛋白轻轻取出,盖在鱼脑面上。再把炒鼎洗净,放进清水400克,煮滚,再加入冰糖,待冰糖煮至全部溶化,成为糖汤时,把汤面上浮的泡沫舀掉,然后从汤锅边徐徐倒入芙蓉鱼脑内即成。
